Yes, you can publish a data update at any time.
Remember:
If you update the date/time in the Conference App Builder for a webinar or meeting, go to the Add-Ons > Virtual Sessions to regenerate the affected events in Zoom. If you regenerate the date/time for a Zoom sessions that is currently going, you will be force ending that particular session.
